5 Minute Ice Cream

Our TEEN Summer Library Program kickoff program on Tuesday was quite delicious! We made 5 minute ice cream with plenty of sweet toppings! Scroll down for the tasty recipe.

You will need:
2    small Ziplock bags
1    large Ziplock bag (plus extras if the large one begins to leak!)
1    Tbsp sugar
1/2 tsp vanilla
Crushed Ice
Salt
Whole Milk
Heavy Cream
Fun ice cream toppings! (I used chocolate syrup, toffee bits, sprinkles, crushed cookies, and blueberry pie filling)

1.  First I had each child grab a small Ziplock bag. In each bag I poured a half cup of whole milk and heavy cream at a 2:1 ratio. I then added a tablespoon of sugar and 1/2 teaspoon of vanilla. I instructed the kids to seal their bags with as little air in them as possible (I helped the younger ones so they wouldn't spill).

2.  Once the sugar was dissolved into the milk/cream mixture I had the kids put another small bag outside of their first bag to reduce the chance of leaking. I then had each child hold open a larger Ziplock bag as a volunteer placed about 4-5 large handfulls of ice into the bag. The volunteer then poured about 3-4 Tbs of salt directly onto the ice.

4.  Each child then placed their ice cream mixture into the large bag with ice and salt. Then they had to shake, jostle and agitate the bag until their cream turned into ice cream! (Note this ended up taking about 10 minutes for most kids, despite the name "5 Minute Ice Cream.")

5.   The consistency of their mixtures eventually became quite thick, much like regular ice cream. That was when we knew to take the mixture out of the outer two bags. I had kids carefully drain the larger bags into the sink before they could begin preparing the ice cream to eat. Then they could take their concoctions to the toppings station and go wild!

*We reused the two outside bags with the next set of kids to save on plastic waste.
**We found the fastest technique for getting a thicker frozen ice cream was a actually a side to side shaking motion.
***I recommend having some towels available as a barrier between the bag of ice as we got some very cold hands!
